Here we go BAMA here we go’oh sorry getting carried away there for a minute!
Let’s get serious about some tasty tailgating food eats.
Too much fun to be had when the tailgating starts and you don’t want to miss out. So I want to share some great “make ahead” recipes that (well just to put in a term we all understand) will take a load off on GAME DAY!!
Now I am going to assume there are gonna be coolers involved so let’s come up with a couple “coldies” that you can make a day or two in advance and toss in the cooler when you’re headed out the door.
SALAMI ROLL UPS
Yields approx. 3 dozen roll ups
Let me just tell you straight up that your are getting a “twofer” with this one…I will explain that shortly.
You will need
Thinly sliced salami (I usually get the packaged presliced salami from the refrigerated area of the meat department at SAMs Club)
1 reg. size PHILIDELPHIA Cream Cheese room temperature
1/2 sweet onion diced finely
2 healthy tablespoons of Prepared Horseradish (or to taste)
1/4 cup milk
OMG this is so simple I am almost embarrassed to tell it but I will!
Set aside the salami for a few minutes and mix the next 3 ingredients in a small bowl. Sparingly add milk to mixture…just enough to make the mixture creamy (spreadable). It might not take all the milk and that’s ok! When the ingredients are completely married as a result of your hooking them up then you grab that salami…separate the presliced discs. If you get the ones I get at SAMs Club you will have waaaaay more than you will need.
Spread the filling mixture on the salami disc…don’t get carried away it takes about a teaspoon to spread the whole salami surface.
Yep you guessed it, as the name suggests the next step is just obvious…ROLL TIDE, I mean ROLL IT UP and then place in container seam side down. Repeat til you’re sick of rolling or you have used all the filling. That’s personal and you don’t have to share what you do!
Refrigerate until ready to serve or travel. Serve right out of the container or take a silver platter and present in style again that’s personal but I’m just making it easy and enjoyable for you.
Pop this top when the other tops start popping!!
Now, remember I mentioned this being a “twofer”? You can simply turn the mixture into a GREAT chip dip! Just add more milk to the mixture to make it a good consistency to dip your chip in and not leave 1/2 the chip in the dip. Now don’t that just beat all?!?!

And by the way the roll up/dip recipe I just shared has been a favorite of mine growing up and now my kids love it too! My brothers and I loved eating those roll ups usually during holidays…my parents always kept finger foods on hand during the holidays…this is just one of many! The chip dip however was often a treat on Sunday Nights after church when the left over roast turned into Roast Beef Sandwiches!
